Classes
I am often asked "where do I start?"  I am a big believer in baby steps and encourage people to start with the most basic and simple dishes so as not to feel overwhelmed.  That is the premise of what I teach.  My classes are designed so that you are able to go home and easily prepare all of the recipes taught in the class.  All recipes, along with resources, are provided in your class packet. 

I offer classes for all levels, whether you are a novice or are already eating a living foods lifestyle.  My classes accomodate all schedules and include both a.m. and p.m. classes, weekday and weekend classes.  Not sure about taking a class?  Be sure to check out the comments below from students who have taken my classes.

What about special equipment?   The only appliances I recommend that you start out with are a food processor (Black & Decker has a 400 watt model for about $40 at Target or Walmart) and a high speed blender (Osterizer makes a good one for about $40).  When you are ready to move forward with your raw food lifestyle and want to invest in quality raw food equipment I highly recommend starting with a VitaMix high speed blender.  VitaMix offers the 3 HP variable speed 5000 series or you can purchase the Vitamix 4500 Blender , the 2 HP non-variable speed 4500 series for $90 less from The Raw Food World.

What recipe books would I recommend to start out with?   If you are just starting out I would definitely recommend Jennifer Cornbleet's Raw Food Made Easy for 1 or 2 People. It contains page after page of very simple, very basic recipes that are truly delicious, make small quantities, and use simple appliances (or no appliances at all).

The FREE "Women's Empowerment Tea" in October!

Wow!  This event was incredible.  We all learned so much from Dr. Gardner regarding breast cancer at this free class and many of us had the thermography screenings which we were able to use as a tool to prevent future breast tumors.  There were a number of people who were unable to attend this event, some wanted thermography screenings but time did not permit unscheduled screeings.  So Dr. Gardner has agreed to come back in February to do another free class, on another important topic, as well as optional thermography screenings.

Raw Food Classes : Are you are sick and tired of being sick and tired?  Is your health and quality of life what you want it to be?  Are you content with your weight?   Do you have all the energy you need to get through the day?  If what you are currently doing is not working for you then I invite you to consider looking at food in a new way by taking one of my Raw Food classes.  Learn a new way to eat that will turn your life around.   

I recently realized, once again, that good health goes beyond raw food (although diet is a big part of it), so I will be expanding on my raw food classes by offering some great natural wellness classes on important health topics, as well as a couple of classes that combine raw and semi raw (for those who are always asking "what do you eat when you don't eat raw?").  These classes will be offered starting in January 2009, along with an Alternative Medicine Cancer Support Group.

So watch for these to be posted at this site soon!

Due to the holidays, I will not be offering any classes during November and December.  However, I will resume teaching again in January 2009 with some brand new class options.

Monthly Event: Raw Food Potluck

Enjoy delicious raw and living food dishes, meet other raw food enthusiasts, and learn about raw food classes and events happening in and around the Fresno area.  This will be a monthly event, always held on the 2nd Saturday of the month.  Join us, maybe bring a friend or two, as we promote the raw food movement in the Central Valley!

Whipped Yams

3 C peeled and chopped yams (roughly 2 large yams)
4-6 dates, pitted and soaked
2-4 Tbsp extra virgin olive oiil
1/4 C filtered water (you can use the soak water from the dates)

1/2 - 1 tsp celtic sea salt
1 tsp ground cinnamon
1/8 tsp ground nutmet
fresh parsley, for garnish

In a food processor combine all ingredients and blend for several minutes until smooth.  For a smoother consistency, continue blending in a high-speed blender till mixture is whipped.  Dust with cinnamon and nutmet and garnish with fresh parsley.  Warm in a dehydrator at 105 degrees for 20-30 minute and serve.

Almond Stuffing
Serves 4

2 C almonds, soaked 8-12 hours, drained, and rinsed (approx 2 1/2 C after soaking)
1 apple, cored and chopped
2 cloves garlic, crushed
1/2 yellow onion, chopped
4 stalks celery, diced
2 T ground golden flax seed
1 T olive oil
2 tsp tamari
1/2 - 1 tsp sea salt, to taste
2 T poultry seasoning

Place the soaked almonds in a food processor and process until smooth.  Add apple, garlic, onion, ground flax, olie oil, tamari, sea salt, and poultry seasoning and pulse briefly, to incorporate and chop slightly.  Remove the almond mixture to a mixing bolw and add celery.  Mix well.  To warm, place in dehydrator at 105 degrees for a couple of hours or put in a double boiler over hot water.  Be careful to just gently warm it or it will no longer be raw.  It should not warm above 105-110 degrees.  Use a candy thermometer to check the temperature.  Stored in a sealed contained in the refrigerator, will keep for 5 days.
